I picked up 3 gorgeous cheeses yesterday from Delaney Bay Cheese Shop in North Bay. Abondance, Délice de Bourgogne, and Roaring Forties. What a feast! Abondance is a semi-hard, unpasteurized, cow’s milk cheese that comes from Haute-Savoie in France,close to the Swiss border. Small oak barrels for aging whisky and cocktails are the next big thing.

It’s cool stuff. Do-it-yourself barrel-aging is fun, interesting and yields very satisfying results. Not only for home, these 1 and 2 litre barrels are in a restaurant. Way to go, Brothers Beer Bistro.
